"Mobile Onigiri" uses alpha rice. Alpha rice is rapidly dried rice that retains the deliciousness of freshly cooked rice. The starch contained in raw rice is in a "beta" state, which is difficult for humans to digest. This is cooked, turned into an easily digestible "gelatinized" state, and then quickly dried. If you let the rice in the "gelatinized" state cool, it will return to the "beta" state, and you will need to heat it again to eat it. However, if you dry it quickly and while controlling the moisture, it will go into the "gelatinized" state. can be maintained. When water or hot water is added to rice that is in a "gelatinized" state, the rice regains its texture and taste as if it had just been cooked.
